Changing things up

It has been a little over 3 years since I launched my business and as I continue to grow, my business needs a few new things to keep it fresh for me and hopefully for you:) I work hard to make sure I have a variety of classes and menu items to appeal to many. I LOVE pretty much all desserts so it is extremely difficult to decide on what to choose, but I usually try to narrow it down to how I learned to write menus.

My first job in North Carolina, my boss Mark and I wrote menus every week. It was intimidating to say the least because I had just finished Pastry School and had never written a menu. I used to go by the book literally and Mark would encourage me to think outside the box. I had no idea how to do it at the time. What stuck with me though was narrowing things down to a few categories. We had a chocolate desserts, a frozen dessert, a fruit dessert, a nut dessert and then something else different. I have been implementing this on occasion and am definitely reapplying it to my method of menu planning and choosing classes from this point on.

Some things are changing and some are staying the same because I do believe in balance. Moving forward with classes and my menu I am going to start incorporating more themed topics and some fun new ideas. As always, it is a guessing game on my part as to what you will gravitate towards so I am hoping you love the new ideas as much as I do.

My new menu is being updated as we speak and some new items have already been added to my menu including some 3 layer cookie cakes, cake rolls, cookie boxes and I am adding some new cheesecakes soon (once I clear out my fridge a bit and have room to put these desserts:)
