The truth about being a badass baker

It is extremely physical- bending, lifting, carrying, mixing, cutting, rolling, running around, standing for endless hours. This past week has been extremely difficult for me. I hurt my back and was down and out for a while and it is still up and down. I feel like I am 100. I try to take breaks but I am pretty much always on my feet and using my right arm and shoulder between baking, teaching and blending tea. My body is yelling at me:(

I have been trained to multitask to do as many tasks as possible to be efficient. This is a good and bad thing. It is great for producing a lot at one time, it’s not great when I take on too much (getting much better at this)

I have allowed myself to be more creative- I get to create anything I want. I have worked at many places over the last 12 1/2 years and continue to grow more confident in my abilities and flavor combinations. I appreciate people trying my sometimes crazy combos :)

I love when people have ideas of desserts or pastries that they want to try but are not sure where to start. Teaching has given me so many opportunities to guide my students through the processes as they are creating which makes it easier and fun for both of us.

I have grown to love the science of baking so much more than before. I had a class in Pasty School that was called Baking Technology. I wish I appreciated it more at the time but I love how making one or two minor adjustments can make a totally different dessert. SO FUN!

My sweet tooth has yet to disappoint me (I HOPE IT NEVER GOES AWAY!). I literally dream about desserts and baking and am genuinely passionate about sharing my experiences, my expertise, my real life roller coaster journey.

I absolutely love meeting ALL of you. I have taken something away from each and every one of you. Your smiles, your joy, your openness, your honesty, your suggestions, your support is truly amazing and I am beyond grateful for ALL of your support.
